Epos Solution for Retail and Wholesale Butchers - RCS

Retail Computer Solutions Ltd (RCS) have designed and developed its Butchery System to control the purchasing, tracking and processing of meat products for both Retail and Wholesale Butchers.

From the initial capture of “Tag” details through to cutting and processing, the Butchery System manages each step of the processes involved.

The Butchery Epos System is ideally suited for Retail and Wholesale Butchers, Farm Shops and Supermarkets etc. 

Designed to manage both single and multiple sites, the Butchery System is integrated to the RCS Streetwise Head Office & Warehouse, Processing Plant and EPoS systems to provide central control over each stage of purchasing, meat processing, storage, distribution and selling.

Why Streetwise?

Streetwise is unique in it capability to manage Butchery requirements and also Food & Non-Food Merchandise Management and EPoS. This mixed environment is particularly well suited to Farm Shops and Supermarkets etc.

Streetwise provides one solution that manages the processing, tracking, storage and distribution of meat products for both Retail and Wholesale Butchers.

Solution Overview.

Product tracking starts initially when cattle are purchased from a market, or from another plant, and are then delivered to the abattoir for slaughter. Once slaughtered the carcasses are transported to a central Processing Plant for cutting and the meat prepared ready for shop, wholesale orders or other production i.e. the production of mince meat, pies etc.  Selections of the carcass are also prepared within the Processing Plant to allow for creation of other products such as sausages, mince and chilli etc.

At the Processing Plant the information detailed below is captured within the Butchery System:-  

Each carcass is tracked by:

Kill Date

Lot Number

Slaughter ID Number

Cutting Plant Number

Tag Number

Production Plant.

The Production Plant solution is designed to provide the following functions:

Purchasing

Receipt of Product

Cutting

Storage

Labelling

Distribution 

Purchasing.

From the initial purchase of the animal detailed information on the supplier, market or other plan(s) together with costs prices and “Tag” number are captured on the system.

The system produces a Purchase Order, which is sent to the supplier, detailing what has been purchased and at what price.

Receipt of Product.

The system knows when the Production Plant is due to expect delivery of the carcass from the abattoir/supplier. When the carcass is received into the Production Plant, the carcass is received into stock from details originally contained within the Purchase Order. The carcass is identified by the “Tag” number.

Once the carcass is received into stock it becomes available to the production processes.

Cutting.

As carcasses are processed, in the Production Plant, Primal Cuts are created and become unique meat cuts in their own right. From the Primal Cut, other sub Primal Cuts may be made thus creating other different products.

Storage.

Carcasses and meat cuts can be stored either in common storage areas or in unique storage areas within the Production Plant.  The system controls when and where carcasses and meat cuts are stored.

The Production Plant solution takes into account the many unique features required by Butchers. These include stock allocation and stock rotation, ensuring the correct products are transferred to the correct shop or wholesale customer giving accurate stock control and minimal wastage through all stock locations by ensuring the oldest cuts are selected first.

Labelling.

The system produces specific Labels for each meat cut to track the source of the product.

Production Plant Labelling.

Labels are produced for the varying cuts of the carcass ready for shop or wholesale orders, with labelled cuts then placed into cold storage areas within the Processing Plant. Below is an Example of the Information produced for the varying meat cut labels within the cold storage areas of the Processing Plant:-

Shop Labelling.

Also included in the Shop Labelling are such features as “cooking instructions” or “recommended recipes”. 

Distribution.

Distribution of product from the Processing Plant can be made to both Retail and Wholesale customers

The system produces a Deliver Note, either paper or electronic.

Retail Shop Butchery. 

Shop EPoS.

Avery Berkel Weigh scales are linked directly to the EPoS tills; this allows individual meat products to be priced and sold without the need for a price embedded barcode.

Alternatively in the example of a Deli at a Farm Shop where the customer pays at a different EPoS till, a price embedded barcode can be easily produced on the Deli EPoS and later scanned at the EPoS till.

Within a Butchery or Deli shop it is essential to provide a quick and responsive service to each and every customer. Customers may start by purchasing mince meat which is weighed on the EPoS system. The customer then moves down the counter and wants to purchase sausages which are weighed again; the customer then moves again to another part of the counter and wants to purchase pork pies. The RCS EPoS solution provides an easy to use solution to this type of sale. Each time the salesperson either weighs or scans a product the sale item is recorded on the network of EPoS tills. As the salesperson moves to different parts of the counter to serve the customer; by pressing the individual salesperson’s “name-button” on the EPoS till the customers total purchases for that transaction are displayed on the EPoS till where the sales person is then serving. The RCS EPoS solution provides greater flexibility when serving customer’s, improves customer service and maximises customer throughput. 

Shop Ordering

Shops can place their meat orders, from a viewable list of products that are available for them to order from, directly onto the Processing Plant using the RCS EPoS shop system.

Once the order(s) is received at the Processing Plant they are picked using portable Hand Held Terminals. Using a Scanner for speed and accuracy the Meat Cuts can then be despatched to the shop to fulfil the shop order.

Wholesale Butchery.

Details of purchases to be made by Wholesale customers (Trade) are entered onto the system. A confirmation of Receipt of Order can be sent to the Customer either in the post or electronically. 

The system produces either a paper based or electronic Hand Held Terminal Picking List to pick the products. At the point of distribution, additional Labelling information is produced and attached to the products:-

Country of Origin
